Store whole tomatoes on the counter
If your tomato is on the cusp of being overripe, you can store it in the refrigerator for a few days to slow ripening, but you will lose some flavor. Use refrigerated tomatoes in cooked dishes.
If you use half a tomato, store the other half cut-side down in an airtight container in the fridge
You can freeze tomatoes to use later in cooked dishes. Freeze cherry tomatoes whole. Cut slicing tomatoes into half inch pieces and freeze, or blanch first, remove skins and then freeze whole.
Alternatively, make a sauce or soup with your tomatoes and freeze it.
